From the LAKA Pantry | Grain Free Pasta Salad with Shroom Drip + The Last Pesto Recipe You'll Ever Need

We love borrowing recipes and ideas from the Laka ladies — anything to make us feel like we’re living the island life. Despite the darkness and cold of winter, we’re trying to get our greens in as much as possible without our digestion suffering from too much raw, cold foods. Scanning their recipe index, we landed on two super simple, super nourishing recipes that take the daunting work out of mealtime prep.

These grain-free pasta salad + pesto recipes just need some fresh sourdough to make a minimal, fully nourishing meal. We’ve added in a few recommended Boketto Pantry staples to give it that extra little touch of gold, but as always, we encourage you to make it yours by using what you have and to meet your personal dietary and taste preferences.

Grain-free Pasta Salad With Shroom Drip (serves 4)

5 cups greens of choice (such as amaranth, arugula, dandelion, spinach, kale)
1 box of grain-free rotini noodles
1/2 cup chopped parsley
5 tbsp olive oil
Juice of one large lemon  
1 tbsp sea salt flakes 
6 tbsp Laka Living Super Shroom Drip 

Recommended Boketto Pantry staples to incorporate:

+ Brightland ALIVE extra virgin olive oil or Plant People CBD olive oil

+ Dark Horse Umami powder

Putting It All Together:

Toss the greens in 4 tbsp olive oil, lemon juice, parsley, and sea salt (or umami powder, if using). Let sit while you cook your box of noodles. Drain the pasta, return back to the pot, and toss with remaining olive oil.
Toss salad greens with pasta and then drizzle with Laka Living Super Shroom Drip.

The Last Pesto Recipe You’ll Ever Need:

1/2 cup walnuts 
1/2 cup hemp seeds
2-3 cups fresh basil 
1/4 cup toasted sesame oil
1/4 cup olive oil
1/4 cup lemon juice
3 tbsp apple cider vinegar
3 cloves garlic
1 tbsp sea salt 
Black pepper to taste. 

Recommended Boketto Pantry staples to incorporate:

+ Ancient Organics Ghee

+ Hummingbird Gardens Rose Chili Salts

Blend everything together in a food processor until desired texture and taste is achieved. Toast some sourdough, slather with ghee, top with pesto, enjoy.
